Harvesting is done both manually and mechanically. immediate transport to the cellar avoids oxidation and thus ensures at the entrance of the winery a quality raw material. This strict temperature control allowing the elaboration of great white wines with high aromatic expression. A maturation on fine lees for four months comes to give the wine extra elegance, depth and length.
